Slow Cooker Tortellini Soup
500g Italian Fennel (Pork or Chicken) Fuge Sausage ground
1 package of Cheese Tortellini
1 yellow or white onion, peeled and diced
3 handfuls of fresh spinach
1 large can of diced tomatoes
6 cups of water
8oz brick of cream cheese, cubed
Brown the sausage meat in a skillet on the stove top or on the sauté function on your Instant Pot until cooked and crumbled. Add the diced onions and cook for another 3-5 minutes.
Add tomatoes, spinach, water, cream cheese to your Instant Pot or transfer to slow cooker. Stir well. Cook in the slow cooker or in Instant Pot (slow cooker setting, low) for 5 hours.
Add the tortellini in the last 20-30 minutes of cooking time.
Options: Garnish with parmesan cheese and fresh parsley
Serve with crusty bread.
