Our homage to the quintessential Italian sausage: whole-muscle pork blended with toasted fennel seed and coriander, a healthy dose of onion, chili, garlic and white wine to balance flavour. Gluten-free, handcrafted in Edmonton.

Spice Level: Medium - balanced but with character.

Cooking Instructions: Grill or pan-sear until golden brown and internal tem-71°C (160°F).

Serving Suggestions: Toss into a tomato-garlic pasta, serve alongside roasted peppers & onions, or grill and serve with crusty bread and fontina.

Pairing Ideas: Chianti, full-bodied lager, or aged provolone.
Storage: Refrigerate; use within 3-4 days after opening or freeze.
